Sumac Chicken & Onions Sheet Pan Dinner

Things are finally cooling down a bit this week so maybe it's time to reunite with your oven.This sheet pan dish is quick and simple- serve it with pita, the beet dip below, and perhaps a side salad for an epic summer meal!

6-8 chicken legs or thighs

3 Onions (use your sweet walla wallas!)

3 tablespoons extra virgin olive oil

For the spice mixture:

2 tablespoons sumac

1 teaspoon cinnamon

½ teaspoon cumin

1 teaspoon allspice

½ teaspoon black pepper

1.5 teaspoon salt

For garnish (optional):

Parsley

Lemon wedges

Preheat oven to 400.

Mix spices together in a bowl, remove one tablespoon for the onions and use the rest for the chicken. Coat the chicken fully with the spice mix.

Thinly slice the onions and coat with spice mix. Lay the onions in a single layer on a sheet pan and drizzle with olive oil. Place the chicken on top of the onions and scatter a few slice of onion over each piece.

Bake for 35-40min then broil for 5min to crisp the chicken skin.

Instead of writing it all out, this week I thought I'd link right to the Smitten Kitchen recipe we love to make in my house - pecan topping optional! You can click right on this text and it will take you there, or copy and paste the link below.

A quick google search will bring up directions to easily turn your own pie pumpkin into homemade pumpkin puree! We usually say that each pound of pumpkin yields about 1 cup of puree - and ya'll pumpkins are around 4lbs each (give or take). Hopefully that helps you decide how to use it!

A note from Rae: Feel free to use the tried and true holy trinity of nutmeg, ginger, and cinnamon, but if you want to mix things up a bit, sub in Chinese Five Spice Powder and wow your fellow diners with touches of anise and a subtle zing of Sichuan pepper! 2 or 3 tsps is usually just right.

Since Za'atar features prominently in two of our recipes this week I figured I should share my own version of this delicious spice mix!  I'm constantly disappointed with the Za'atar blends I see in stores and the recipes I find on the web, so I finally made my own based on the flavor profile that World Spice uses for their own Syrian Za'atar blend. Trust me, you'll want to keep some of this on hand in your pantry - it can jazz up just about any roasted veggie and is delicious added to sauces, dips, dressings, and marinades.
